The practice of milking is very serious work. You
start very early in the morning and drive the cows into the yard where the calves
have been penned up through the night. According to stories from Australia, you
have to start a chase after the first cow, who with a perversity common to Australian
females, expects to be pursued two or three times round the yard. With this
done, she permits her head to be detained and the milking process to occur.
However, on one morning a milker shared this story with us. He told of the day
that a young cow got loose from the binding and tipped the milkman and the milk
pail over and charged the head stockman. The cow jumped the fence leaving the
